We are having a double snow day, i.e. drive Allison crazy day. Yesterday, the threat of snow wasn’t even supposed to hit until well after school hours, but the schools decided to close the whole day anyway. Not cool. My kids go to a private Montessori school, that I help with a little, and we follow the local county’s closure schedule. So, we were closed, too. But I voted for a half day. Just to make that known…
So yesterday M and the kiddos lazed around watching TV bemoaning the lack of snow. The fact that they were home being lazy and I was home trying to work was more than slightly annoying. I love working from home, but when everyone else is home I want to BE WITH them, not just home with them. Cutest thing EVER: M and TC baked brownies together (and I got to help when he accidentally scrambled the eggs in the melted butter!) Then, M and I made his favorite dinner: not paleo, not gluten free, chicken and dumplings. It was tasty, but the kids don’t like it and all the gluten in the broth and dumplings gives me tummy trouble, so he enjoyed them all by himself. And the kiddos and I had GF brownies with coconut milk ice cream for dinner. 🙂 Trade off! haha.
Just as night fell the snow started coming down. Well, first a layer of freezing rain, sleet, and ice…. then fluffy snowflakes, in the middle of the night when no one could play in them. Mother nature decided to take a piss on NC this year. So, thanks for that Mama Earth. But, this morning when the kidlets woke up, they were super jazzed about going and playing in the white stuff. We all bundled up and set out to build a snowman. Currently, he is more of a Snow-Stump because we couldn’t get the snow to stick together. What can I say, we’re from the south. This alien precipitation is an outlier of my decidedly Southern knowledge base. How do you make those giant snowballs? I’m going to have to search YouTube.
Tonight, M and I are going to attempt some chicken korma with ginger coconut cauliflower rice. The Chicken Korma recipe is from allrecipes.com and the ginger/cauli rice is from paleoparents.com. I’ll also be making jasmine rice, because so far I’m the only one who likes the cauli rice. Pix to follow this evening. Hopefully, there will be smiling faces and full bellies! Oh, and a finished Snow Man!
